Shimuja Ramen is the life's work of Kagoshima, Kyushu-born chef and owner Keiichi Maemura, who left a career in finance in 2008 to master the art of ramen at one of Japan's most respected ramen workshops. Maemura opened two Shimuja locations in Japan before arriving in South Florida as a pop-up in 2016, eventually building the concept into three Miami locations. The Downtown outpost sits inside Julia & Henry's Food Hall on E Flagler St and showcases Maemura's signature: a 100% pork bone broth simmered for 18 hours, with eleven ramen variations and classic Japanese sides including gyoza and karaage.
