Chef Kengo Nishimi was born in Fukuoka, Japan — the city synonymous with tonkotsu ramen — and trained at Japanese kitchens before spending years under Yoshizumi Nagaya at his Michelin-starred restaurant in Düsseldorf. At ITO, which he opened in 2020 in the fashionable Belgisches Viertel, Nishimi interprets traditional Japanese cuisine with European refinement. The evening omakase — 5 or 6 courses at €109–€137 — is the restaurant's centrepiece, spanning seasonal starters, sashimi, sushi, premium proteins including A5 Wagyu and Black Cod, and a dessert course. At lunch, a more accessible set menu offers Blue Fin tuna, tempura and nigiri variations.
