The Hatena Group, which operates Yakitori Yurippi, Tachinomi YP, and Nakano Darling, built Nomidokoro Indigo as a love letter to the neighbourhood sake bars (nomidokoro) that populate Tokyo's backstreets. Japanese co-founder Mitomo Somehara brings the cultural conviction while executive chef Hideyuki Kato brings the culinary craft, producing small plates that match the natural and traditional sake selections course by course.
