Of all the venues in the Hatena Group's growing family, Nakano Darling most completely distils the ethos of Japanese casual hospitality. Every major element — from the tatami seating area and dug-out horigotatsu tables to the all-Japanese-speaking staff and house-made karaage fried to order — has been built around the lived experience of Japanese co-founder Mitomo Somehara and his childhood friend Tin Jung Shea. The space references the Nakano suburb of Tokyo where the three founders spent formative time, and the atmosphere reflects the founding philosophy: keep things simple, perfect one dish, and look after regulars. Steam Mill Lane in Haymarket provides the alley-bar energy the concept demands, and the late-night hours (2am Fri–Sat) serve the neighbourhood's night-owl character. Broadsheet, Concrete Playground, and Urban List have all placed it among Sydney's essential izakayas.
