Ichoume takes its name from its address — '1' (ichi) Harbour Street, Darling Quarter — and the izakaya tradition of vibrant community dining. Owned jointly by Ari K. (who also runs Izakaya Yebisu and Inase Sakaba) and Yuki Ishikawa, the venue brings Japanese-owned credentials to Darling Harbour's waterfront precinct. Chef Shinsuke Toda, recognised for his contemporary sushi technique, leads the kitchen alongside menu supervisor Akiko Ishikawa. The drinks programme is a standout: sake sommelier Chiaki Komura has curated an authentic sake and shochu list, while sommelier Ned Goodwyn — one of only 200 Master of Wine holders worldwide — oversees the wine selection. Happy hour runs daily until 6pm.
