Kei Tokiwa grew up connected to Japanese rice-farming culture through her grandmother, and trained in Sydney's Japanese dining scene at Chaco Bar before creating Amuro as an ode to rice in all its forms. The 20-seat diner on Crown Street combines a counter-forward layout with a glass-doored 'Boutique Saké Room', stocked with regional Japanese sake rarely seen outside specialist bars. The menu changes almost daily and incorporates contemporary Chinese and American influences alongside core Japanese preparations — a reflection of Tokiwa's Sydney upbringing without compromising the restaurant's fundamentally Japanese identity.
