About
Opened in 2019 next door to Kamonegi, Hannyatou is the sake and fermented-food companion to Mutsuko Soma's celebrated soba restaurant. Soma holds both the kikizakeshi (Japanese sake sommelier) certification and WSET Level III, making her one of the most formally credentialed sake experts in the Pacific Northwest. The bar features a rotating selection of Japanese sake that emphasizes natural brewing, terroir, and artisan producers, paired with house-fermented pickles, small plates, and seasonal bites that showcase the same Japanese ingredient philosophy found at Kamonegi.
Why it's on Washoku Guide

  • Sister to the acclaimed Kamonegi — the same Tochigi-born culinary vision in a more relaxed format
  • The rare chance to explore Japanese sake with a true specialist guiding every pour
