Mizu Izakaya opened in Khar West after Chef Lakhan Jethani completed his apprenticeship in Japan with Daisuke Namura, head chef of Tokyo's acclaimed Sougo. The restaurant's supply chain mirrors its culinary philosophy: the majority of ingredients — from konbu and katsuobushi to premium seafood — arrive directly from Japan. An intimate omakase room, launched to strong demand, allows Jethani to cook without restraint across eight courses. Ranked #36 in Condé Nast Traveller Top 50 India (2025) and awarded Culinary Culture's '3 Ultimate Stars', Mizu also extends its kitchen to occasional pop-up dinners in Goa. Signature dishes include mentaiko grilled scallops and housemade chawanmushi.
