Ichiran is the original Japanese solo-dining ramen institution, founded in Fukuoka in 1960 and Hong Kong's first major Japanese ramen chain when it opened in Causeway Bay in 2013. Guests customise every element of their tonkotsu broth — richness, spice, noodle texture, and toppings — from a private booth that focuses all attention on the bowl.

About
Ichiran's defining feature is the 'flavour concentration booth' — a low partition and roll-down curtain that shields each diner for an uninterrupted, meditative ramen experience. Every bowl begins with the signature tonkotsu pork-bone broth, a recipe developed and standardised in Hakata since 1960, and diners fine-tune it via a paper form covering richness, spice level, garlic intensity, green onion, chashu, and noodle firmness. The Causeway Bay branch, Ichiran's first overseas outpost globally, opened in July 2013 and operates around the clock, making it a perennial late-night destination. All three Hong Kong branches are direct international outlets of the 100% Japanese-owned parent, ensuring recipe integrity and the same quality control applied in Japan. Extra noodle portions (kaedama) keep the experience authentic to the Hakata tradition where the broth is too good to waste.
Neighborhood & visiting

Ichiran sits in Causeway Bay / Tsim Sha Tsui / Mong Kok (3 branches), one of Hong Kong's neighborhoods where authentic Japanese kitchens have taken root. The house does not publish an online booking link; call ahead to secure a seat, especially on weekends. Check the posted hours before you go — traditional ramen restaurants often close between service periods.

Why it's on Washoku Guide
  • As Ichiran's first-ever overseas branch, the Causeway Bay location holds historic significance and delivers the definitive Fukuoka tonkotsu experience outside Japan.
  • The customisation system — 9+ variables on the order form — makes every bowl a personalised Japanese ramen ritual, unlike any other chain in the city.
  • Near-24-hour operations at two branches mean authentic Japanese tonkotsu is available for post-midnight cravings that most restaurants cannot satisfy.
  • The solo-booth concept reduces social pressure and enhances focus on the food, creating an unusually contemplative ramen experience for a city that rarely slows down.

Founded 1960 in Hakata, Fukuoka. First HK branch (global first overseas) opened July 2013, Causeway Bay. 100% Japanese corporate ownership. Three branches currently operating.
