About
Kintsugi takes its name from the Japanese art of repairing broken pottery with gold lacquer — the idea that breakage and repair are part of an object's history. Chef Hiroshi Shimamura applies this philosophy to Edomae sushi, the classical Tokyo style that aged fish with vinegar and salt before refrigeration existed. The restaurant occupies the ground-floor hall of the Ohla Eixample hotel on Carrer de Còrsega, with capacity for 50 across the counter, terrace and tables. The Michelin Guide's inclusion reflects the quality of Shimamura's sourcing — particularly Ebro Delta ingredients — and his adherence to traditional preparation methods.
