Inspired by deep research into Japan's tonkatsu culture, Saku opened on Robson Street in 2018 as Vancouver's first dedicated tonkatsu restaurant—a category entirely absent from the city's Japanese dining landscape. Chef Yusuke Matsumoto from Osaka developed the recipe and oversaw the precise double-frying technique that produces a shatteringly crispy, golden panko crust on Canadian pork sourced from Japan-export farms. The menu's tonkatsu sets—served with steamed rice (unlimited refills), shredded cabbage, miso soup, and house-made tonkatsu sauce—mirror the set-meal format of respected tonkatsu houses in Tokyo. Saku now operates five locations across Metro Vancouver and has expanded to Toronto.
