About
Chef-owner Shin Iwamoto opened Motonobu Udon in August 2020, fulfilling a long-held ambition to bring his grandmother's udon recipe — developed in Japan and refined through training in both Japan and France — to Vancouver's East Hastings neighbourhood. The noodles are made fresh and cut to order, a labour-intensive process that yields the characteristic toothy chew and silk-smooth texture that defines great Japanese udon. Traditional varieties are available hot or cold, served with tempura bits, fresh green onions, or with mentsyu dipping sauce — each bowl a study in Japanese culinary restraint. The Michelin Guide recognised Motonobu with a Bib Gourmand designation, calling out the simple, light-flooded dining room as an authentic expression of Japanese noodle culture. It remains the only restaurant in Vancouver wholly dedicated to udon.
