Etaru Hallandale Beach is the South Florida outpost of Rainer Becker's Japanese robatayaki concept, which opened at the Hyde Beach Club resort in 2018. Becker, who co-founded Zuma and Roka (Michelin-starred in London), spent years in Japanese restaurant kitchens before developing the Etaru concept as a more resort-focused expression of Japanese robatayaki cooking. Corporate Executive Chef Hamish Brown trained at Roka London, giving the kitchen a direct Michelin-caliber Japanese culinary lineage. The menu centers on the charcoal robata grill — skirt steak, teriyaki salmon, black cod, king crab — alongside a raw Japanese bar offering sashimi, maki, and nigiri. Multiple dining zones including an outdoor terrace, beach bar, and second-floor restaurant create a versatile, all-day venue.
