About
After many years leading the kitchen at Miyama Flor Baja, Hiroo Miki San struck out on his own in 2014 to open the restaurant that bears his name. Born in Osaka, Miki San spent half his life in Madrid building a reputation as one of the city's most respected Japanese chefs, and his own restaurant reflects a mature, personal vision of Japanese sushi cuisine with occasional Western touches that feel earned rather than forced. The intimate space creates the atmosphere of a private dining experience, where guests at the counter can watch Miki San work with the attentiveness of a craftsman. The kitchen sources premium fish and seasonal Japanese ingredients, ensuring quality that consistently earns top ratings on TheFork (9.6/10) and glowing reviews from Spanish Japanese food authorities.
