Opened in 2020, Tori-Key has quickly become one of the most celebrated Japanese restaurants in Madrid by doing something unusual: abandoning the sushi format entirely in favour of the ancient Japanese art of yakitori. Chef Hiroshi Kobayashi, Japanese-born and deeply versed in the techniques of charcoal grilling, presents a menu of precisely prepared skewers that extends far beyond chicken — wagyu beef, pork, offal cuts and seasonal vegetables are all treated with equal rigour. The Michelin Guide inspectors highlight both the quality of the grill work and Kobayashi's attentiveness to his guests from behind the counter. A semi-gastro tasting menu at approximately €45 makes this an accessible entry into serious yakitori dining, while a dedicated sake programme curated with a sake sommelier elevates the full experience.
