Yashin Sushi opened in 2010 on Argyll Road, Kensington, founded by executive chef Yasuhiro Mineno — formerly head chef of Ubon by Nobu — and head chef and itamae Shinya Ikeda, previously of traditional restaurant Yumi in Marylebone. Both chefs trained in the rigorous Japanese itamae tradition before honing their craft at Nobu, and Yashin's USP is its 'without soy sauce' philosophy: each nigiri is seasoned by the chef so that the intrinsic flavour of the fish is never masked. The intimate counter setting allows guests a front-row view of meticulous craftsmanship, and the restaurant has built a strong following among London's Japanese food cognoscenti. The team also runs sister restaurant Yashin Ocean House in South Kensington.
