Opened in June 2021, Maru is the solo London project of third-generation Japanese sushi chef Taiji Maruyama, who trained at a three-Michelin-starred restaurant in Tokyo before working at Nobu London and as executive chef at Surrey's Beaverbrook hotel. Named for his family name — and the Japanese word for 'circle' — Maru's eight-seat counter in Shepherd Market offers an evolving 20-course omakase using predominantly British ingredients, including seafood from Cornish waters, shaped by Maruyama's Edomae training. The restaurant is listed in the Michelin Guide UK and widely considered one of London's finest Japanese experiences.
