Koppu holds a unique position in Portugal's food history: it was the country's first restaurant dedicated entirely to ramen, opening in 2016 after founder Susana Borges Diogo trained under Japanese chef Yuku Gomi in London and then travelled to Japan to study with masters André Nobuyuki Kawai, Hirotoshi Ogawa and Fabio Ishizuka. The name 'Koppu' ('cup' in Japanese) is itself a loan word borrowed from Portuguese — a living trace of historical Luso-Japanese exchange. The menu extends beyond ramen to yakitori, gyoza and a curated sake bar. Two locations (Avenida and Chiado) are open every day, making Koppu the most accessible ramen option in central Lisbon.
