Ajitama was the first restaurant in Portugal to centre entirely on ramen, opening in 2015 after founders António Carvalhão and João Azevedo Ferreira spent time living in Asia and studying the craft under Japanese masters. Their first act was to create Portugal's inaugural Ramen Supper Club — a series of dining events that built a dedicated audience before the restaurant opened. The hallmark of Ajitama is its broths: tonkotsu and shoyu simmered for 20 hours, with housemade noodles. Two locations — in the culturally vibrant Chiado and the central Saldanha — keep it accessible across the city. Time Out, NIT and Observador consistently rate it Lisbon's top ramen destination.
