About
Zuicho's chef-owner Fumio Suzuki is a Tokyo native who trained at Kita-Ooji and then spent years as head chef at the celebrated Ginza Uchiyama, a restaurant that accumulated over ten consecutive Michelin stars — a track record that speaks to his classical kappo foundations. He opened Zuicho in Sheung Wan in 2019 and earned his first Hong Kong Michelin star two years later. The 10-seat counter format is intentionally intimate: Suzuki-san prepares each course in full view, walking guests through a menu that marries traditional Japanese kappo technique with the finest seasonal produce sourced from trusted Japanese purveyors. Zuicho has cultivated a loyal following among Hong Kong's most serious Japanese food enthusiasts, and its low-key Jervois Street address — hidden in the ground floor of The Mercer — adds an element of discovery to the evening.
