When Wagyumafia founder Hisato Hamada chose Hong Kong as the location for the brand's first overseas restaurant in 2018, it was a deliberate statement about the city's position as Asia's most discerning dining capital. The Wan Chai location — an intimate 18-seat chef's counter in Guardian House — brings the full Wagyumafia philosophy to Hong Kong: direct relationships with Japan's rarest wagyu farmers, obsessive quality control, and an omakase format that elevates each wagyu cut into a course-by-course narrative. Sourcing spans the top one percent of Kobe beef certification and Ozaki Wagyu from Muneharu Ozaki's single farm in Miyazaki — one of the most rare and sought-after single-producer wagyu operations in Japan. The Hong Kong-exclusive menu layers original creations alongside Tokyo signatures including the iconic Cutlet Sandwich, with cocktails and wine pairings crafted to complement each course.
