About
Shinji Kanesaka is one of Ginza's most celebrated sushi masters, his two-Michelin-star Tokyo restaurant renowned for immaculate Edomae technique and a philosophy that places the quality of shari — red-vinegar rice — at the centre of every meal. Kanesaka Hong Kong was established to transmit that philosophy to Central's international dining community, with head chef Seiji Taniguchi and sous chef Omine Kento leading service in the intimate counter setting on the fifth floor of CCB Tower. Taniguchi trained at the Kanesaka Palace Hotel Tokyo branch under a protégé of Kanesaka himself, ensuring the standards and methods of the Tokyo flagship are faithfully reproduced in Hong Kong. The restaurant operates lunch and dinner six days a week and accepts reservations via SevenRooms or phone. It is also the former training ground of Sushi Fujimoto's Kenichi Fujimoto, underscoring its position as a pillar of Hong Kong's Edomae ecosystem.
