Opened in 2022 on the 19th floor of H Queen's — Central's dedicated art gallery building — Gassan is the Hong Kong sister of Tokyo's Michelin-starred Hiyama restaurant. The restaurant's name references Gassan, the central and most sacred peak of Yamagata Prefecture's Dewa Sanzan, conveying an ambition to stand at the summit of Japanese dining in Hong Kong. Kyoto-born chef Hoso, with over five decades of Japanese culinary experience, leads the kitchen and anchors the authenticity of its kaiseki and omakase sushi programmes. The interior evokes an ancient Japanese ferry through dark woods, boat-like sushi counter and bamboo detailing.
