Sumibi Yakiniku Ishidaya made its name in Kobe by maintaining direct relationships with the cattle farms of Hyogo Prefecture — the region legally designated to produce certified Kobe beef — and translating that premium sourcing into a charcoal-grill yakiniku experience unmatched outside Japan. The Hong Kong branch, the brand's first overseas outpost, replicates that farm-to-table traceability with cuts including A5 Kobe ribeye, chateaubriand, and premium omakase platters featuring marbled karubi, lean meat, and chuck roll. The intimate setting in Century Square — with ample space between booths and near-private room privacy — distinguishes it from the more communal yakiniku halls nearby. The menu extends beyond pure yakiniku to include a wagyu carpaccio starter, wagyu cold noodles, and an Ishidaya house salad with ponzu dressing, offering a more structured multi-course experience.
