Chef Mitsuru Konishi earned two Michelin stars at his previous restaurant Wagyu Takumi before opening Zest in 2019 to explore his own French-Japanese creative language. The dining room on the 28th floor features a striking aqua-accented interior and counter seating that keeps guests close to the open kitchen, where Japanese precision meets French classical plating. Signature dishes layer fine Japanese ingredients — premium wagyu, seasonal seafood, truffles — with French building blocks of reduction, emulsion and pastry technique. The 29th-floor lounge doubles as a cocktail bar with Japanese-inspired libations and lighter bento lunch formats. Zest received its first Michelin star in 2021 and has retained it since, cementing Konishi's position as one of Hong Kong's most distinctive fusion voices.
