About
The Isshin Group, based in Osaka, developed Zagin Soba around a ramen philosophy centred on Sakurajima chicken — a premium breed from Kagoshima, Kyushu — cooked to produce a broth that is simultaneously light and deeply umami. The 'cappuccino technique' aerates the broth into a frothed, creamy crown that caps each bowl, creating a visual signature and a distinctive mouthfeel not found in conventional Japanese ramen. The Happy Valley branch, Zagin Soba's first Hong Kong outpost, became one of the city's most talked-about ramen openings and spawned subsequent locations in Central, Taikoo Shing, and BaseHall. The Osaka flagship at Edobori, Nishi Ward, and all Hong Kong branches appear on the Isshin Group's official corporate website, confirming direct Japanese parentage. The relaxed neighbourhood setting at Happy Valley and the trendy BaseHall food-hall location in Jardine House offer two quite different ways to enjoy the same exceptional bowl.
Why it's on Washoku Guide
- The cappuccino-style aerated broth is a visually striking and texturally unique ramen technique unavailable elsewhere in Hong Kong.
- Sakurajima chicken from Kagoshima — one of Japan's premium poultry breeds — produces a broth with a cleaner, more elegant umami than standard chicken stock.
- Happy Valley's neighbourhood charm and the adjacent racecourse make a visit to Zagin Soba's original HK outpost a genuinely local, off-the-tourist-trail experience.
- Multiple locations, including the convenient BaseHall food hall in Jardine House, Central, make quality Japanese ramen accessible during a working lunch.
