Ryota Kappou Modern bears its chef's name and reflects his singular culinary vision: a modern interpretation of Japan's kappo tradition informed by years spent as head sushi chef at two-Michelin-starred Tenku RyuGin Hong Kong and stints at fine-dining establishments in Europe. Chef Ryota Kanesawa, whose Osaka family has been in the culinary trade for generations, creates menus that honour the seasons of Japan while incorporating subtle Western influences in technique and presentation. Located on the 21st floor of 18 On Lan Street — a building that also houses Nagamoto — the sleek, minimalist counter seats diners in close proximity to the chef, enabling an educational and theatrical dining experience.
