Born in Asahikawa, the city known for producing Japan's richest and most complex ramen styles, Santouka has been crafting its signature soup since 1988 under founder Hitoshi Hatanaka. Unlike many international ramen chains that franchise out, Ab-Out Co. operates all overseas branches as wholly-owned subsidiaries, maintaining precise control over recipes, ingredient sourcing, and training. The pork cheek toroniku set is the signature order — a limited daily quantity of slow-cooked, melt-tender cheek meat available only in the shio (salt) broth, which requires a delicate hand rarely found in Hong Kong. The intimate counter-and-table layout at iSQUARE reflects the compact Hokkaido ramen shop aesthetic, prioritising the bowl over spectacle.
