Ramen Jo occupies a deceptively modest ground-floor space in a quiet side street off Causeway Bay, yet its eight consecutive years in the Michelin Guide place it among the most critically validated ramen shops in all of Hong Kong. The menu is concise and intentional: tonkotsu ramen in thin or thick noodle variants, a special spicy tsukemen with thick dipping noodles, and a rotating set of side dishes including potato salad, gyoza, and crispy fried chicken. The slow-cooked 66°C chashu — soft pink, fatty, and intensely savoury — is a centrepiece that distinguishes the kitchen's technical care.
