Nagamoto opened in 2022 at the 8th floor of 18 On Lan Street, Central, succeeding the long-running Kashiwaya Hong Kong that formerly occupied the same space. Chef Teruhiko Nagamoto (Japanese, originally trained in Kyoto's kaiseki tradition) is both owner and sole creative force, drawing on years of experience at Michelin-starred restaurants in Japan to craft omakase menus rooted in the concept of 'shun' — honouring ingredients at their precise moment of perfection. The intimate 12-seat counter invites every diner to watch Nagamoto-san work through kaiseki courses that shift with each passing season: matsuba crab in winter, young ayu from Gifu in summer, autumn mushrooms and fresh tofu in between. The restaurant earned one Michelin star in its debut year (2023 Michelin Guide) and has retained it since, cementing its place among Hong Kong's finest Japanese dining rooms.
