Kikanbo takes its name from a spiked demon club, and the bold, fierce flavours of its karashibi miso ramen live up to the imagery. The defining feature is a 5×5 customisation grid: five spice levels (from none to the Carolina Reaper-spiked Oni level) crossed with five numbness levels, yielding 25 distinct broth profiles that make each visit a new experiment. The thick, springy noodles are engineered to hold the complex miso base, while toppings include premium chashu, marinated eggs, bean sprouts, and the distinctive coriander option that has generated a dedicated following in Hong Kong. The Japanese president personally supervised the Hong Kong launch in 2019 to ensure brand standards, and local staff trained in Japan before opening.
