Ichiran's defining feature is the 'flavour concentration booth' — a low partition and roll-down curtain that shields each diner for an uninterrupted, meditative ramen experience. Every bowl begins with the signature tonkotsu pork-bone broth, a recipe developed and standardised in Hakata since 1960, and diners fine-tune it via a paper form covering richness, spice level, garlic intensity, green onion, chashu, and noodle firmness. The Causeway Bay branch, Ichiran's first overseas outpost globally, opened in July 2013 and operates around the clock, making it a perennial late-night destination. All three Hong Kong branches are direct international outlets of the 100% Japanese-owned parent, ensuring recipe integrity and the same quality control applied in Japan. Extra noodle portions (kaedama) keep the experience authentic to the Hakata tradition where the broth is too good to waste.
