Shun Sato began his culinary journey at the Tsukiji fish market in Tokyo before working his way through Australia and London. He arrived in Hong Kong to head up Fukuro for Black Sheep Restaurants, where he honed his modern izakaya cooking before striking out on his own with Censu in 2021. Located on atmospheric Gough Street at the border of Central and Sheung Wan, Censu feels personal from the moment you walk in — a tribute to Sato's father's izakaya in Sendai, translated into dishes that blend Japanese precision with international sensibility. The Hong Kong Tourism Board has featured Censu as a recommended destination, and the restaurant's reputation has spread to a Tokyo outpost, a testament to its distinctive identity.
