About
Perched on the first floor of the Banyan Tree Dubai on Bluewaters Island, TakaHisa was conceived as a celebration of Japan's two greatest culinary pillars: Edomae sushi and A5 Wagyu beef. Chef Takashi Namekata honed his craft over 15 years at the Michelin Guide Tokyo-listed Ukai Group, while Chef Hisao Ueda spent seven years in kaiseki restaurants across Hokkaido before relocating to Dubai in 2011, earning a UAE Golden Visa as a Wagyu Master. Co-owner Aimi Shibuya completes the fully Japanese ownership trio. The restaurant sources fresh fish from Toyosu Market four to five times weekly via its own dedicated procurement facility, and serves A5 Ozaki Beef, Kobe Beef, and Matsusaka Beef at BMS 12 grading. In 2025, TakaHisa became the only Japanese restaurant listed in the Michelin Guide Dubai and was awarded 3 Toques alongside the Home-Grown Restaurant of the Year title by Gault & Millau UAE.
Why it's on Washoku Guide
- Fully Japanese-owned and led: all three founders and both executive chefs are Japanese nationals with pedigree training in Japan.
- The only Japanese restaurant listed in the 2025 Michelin Guide Dubai, also holding Gault & Millau 3 Toques and Home-Grown Restaurant of the Year 2025.
- Seafood is flown from Tokyo's Toyosu Market four to five times a week via the restaurant's own import facility — supply chain rivalling that of Japan's top sushi bars.
- A5 Ozaki, Kobe, and Matsusaka beef at BMS 12 grading — among the rarest wagyu served outside Japan — pairs with the omakase sushi counter for a uniquely dual-mastery experience.
