About
Opened in March 2025 at The Dubai EDITION hotel on Fountain Street, KEN by Kamatsuda is the intimate labour of a Japanese chef-owner who built his career in high-end restaurants across Japan — culminating in running an exclusive members-only venue — before bringing his philosophy to Dubai. Chef Ken Kamatsuda is guided by the principle of ishoku-dogen (food and medicine sharing the same origin), crafting dishes that are simultaneously indulgent and mindful. The open kitchen seats guests in an interactive setting where Kamatsuda and his team prepare each course in front of diners. Three omakase tiers are available: Hajime (AED 1,350 per person, wagyu and seasonal fish), Gokan (AED 2,500, five-senses, 13 dishes) and Maboroshi (AED 5,000, ultra-premium Awa Wagyu, king crab, and uni). Rare Awa Wagyu from Tokushima Prefecture and top-grade seafood flown from Toyosu are sourced directly from Japan. Theatrical dessert presentations and live calligraphy by Bisen Aoyagi add cultural dimension to the experience.
Why it's on Washoku Guide
- Chef-Owner Ken Kamatsuda is a Japan-trained, Japan-born chef who previously ran an exclusive members-only restaurant in Japan — rare pedigree at this level of omakase in Dubai.
- Rare Awa Wagyu from Tokushima Prefecture — virtually unavailable outside Japan — served alongside Toyosu-sourced premium seafood, providing exceptional ingredient exclusivity.
- The AED 5,000 Maboroshi menu is among the most premium omakase offerings in the entire Middle East, featuring king crab, sea urchin, and the rarest wagyu available.
- The interactive open-kitchen format — with theatrical dessert finishes and live calligraphy performances — delivers a multi-sensory cultural immersion.
