First opened at Atlantis The Palm in 2008, Nobu Dubai was relocated and reimagined in 2023 to occupy the Royal Bridge at the hotel's 22nd floor, offering panoramic views of the Gulf alongside Nobu Matsuhisa's iconic Japanese-Peruvian menu. Chef Matsuhisa — born in Saitama, Japan, and trained in traditional Japanese restaurants before fusing Peruvian influences during years in Lima — co-founded the global Nobu brand, now spanning 58 locations worldwide. The Dubai restaurant was selected in the 2023 Michelin Guide Dubai, recognising its consistent delivery of Nobu's hallmark dishes: miso-marinated black cod, new-style sashimi, and rock shrimp tempura. The programme encompasses a full dinner service, weekend lunch, a late-night bar, and periodic special events.
