Zuru Zuru is the result of Chef Kiran Tamang's obsessive study of Japanese ramen craft — a discipline he has pursued with a depth that Time Out Delhi documented at length, noting his articulation of the five pillars of ramen (tare, broth, noodles, toppings, fat). Operating from a 12-seat DDA market shopfront in Shahpur Jat, the kitchen practises zero-waste cooking, with housemade ferments, housemade tare sauces and seasonal condiments reflecting Japanese culinary ethos. Reservation via Instagram is required given the tiny capacity. The Delhi ramen community considers this the city's most technically accurate Japanese ramen experience — earned without a formal Japanese affiliation but through years of self-directed craft mastery.
