About
Opened in October 2015 as the third pillar of Hideki Matsuhisa's Grupo Shunka empire, Kak Koy occupies a different register from the formality of Koy Shunka or the izakaya tradition of Shunka. Here the focus is on sumiyaki — Japanese charcoal grill cookery — and robatayaki, the ancient technique of cooking over an open fire at the edge of a boat or hearth. Matsuhisa applies to live-fire cooking the same precision and Japanese sensibility that earned him a Michelin star: ingredients are chosen for their affinity with smoke and heat, and the presentation honours Japanese aesthetic principles. Located a short walk from Shunka in the Gothic Quarter, Kak Koy completes the Shunka family's coverage of the main pillars of Japanese cuisine.
