Chef-owner Antonis Drakoularakos committed fully to the craft before opening: he learned to speak Japanese fluently, then trained at the Tokyo Sushi Academy in 2014. The result is a 12-seat counter open weekday evenings only, with no printed menu — every decision rests with the chef in true edomae omakase tradition. The restaurant has been listed on World's 50 Best Discovery and named among the world's 100 best chefs at the inaugural Chefs World Summit in 2016. Technique is the focus: aged fish, precise rice seasoning, and seasonal Japanese ingredients imported directly. Advance booking is essential and the starting price per person is approximately €60.
