Hakata Choten traces its roots to a 1937 Fukuoka food stall that pioneered Hakata tonkotsu ramen. The Paris branch on rue des Petits Champs brings that Kyushu tradition to the 1st arrondissement, ladling deeply reduced pork-bone broth into bowls customised with black garlic oil, spicy miso paste, or extra chashu.
