HANADA is one of Paris's most philosophically intentional sushi destinations. Chef Masayoshi Hanada trained in Japan's most exacting establishments and brings over two decades of discipline to a singular €350 omakase at a massive hinoki counter in a space purposefully designed to fade into the background, allowing each gesture and each nigiri to take center stage. Located at 15 quai Voltaire — directly across from Paris's art galleries and facing the Seine — the restaurant's placement is deliberate: the chef conceives of his sushi as art, composed and reinvented every evening. Photography and video are prohibited during the meal, reinforcing the meditative, contemplative atmosphere the chef describes as 'a sanctuary of slow time.' The tasting menu consists of nigiri served piece by piece, each a precise balance of seasoned rice, carefully sourced seasonal fish, and the chef's hand. A strict 72-hour cancellation policy applies.
