Matsuhisa Paris opened in 2016 as the sixth location in the Matsuhisa restaurant empire founded by Japanese-Peruvian chef Nobu Matsuhisa, whose career spans Tokyo, Lima, Los Angeles, and beyond. Set within the art deco Le Royal Monceau – Raffles Paris in the 8th arrondissement, the restaurant brings Nobu's signature fusion of Japanese tradition and South American bold flavours to Paris. Executive Chef Emanuele Bombardier, Italian-born but Japanese-trained, has worked under Matsuhisa in Europe and South Africa for over 15 years and brings his own creative sensibility to the menu. Signature dishes include the legendary black cod with miso, yellowtail jalapeño, and wagyu tobanyaki. The elegant dining room and Japanese-inspired cocktail list complete the experience.
