Operated by Kobe-based Toridoll Holdings, which launched the Marugame Udon concept in 2000 after founder Awata Takaya witnessed the hand-making of Sanuki udon in Kagawa Prefecture, the Soho site features an open kitchen where chefs roll, press and cut noodles in full view. Click-and-collect kiosks are available for on-the-go orders. No Michelin recognition.
