Kanada-Ya Angel extends founder Kazuhiro Kanada's tonkotsu ramen vision to Islington's famous Upper Street, one of North London's most vibrant dining corridors. The third London branch of the brand, it delivers the same recipe — an 18-hour pork-bone broth with handmade alkaline noodles and chashu pork belly — that Kanada developed in the small town of Yukuhashi, Fukuoka, where he established the original restaurant in 2009 after leaving professional cycling. The Angel branch has attracted a devoted local following and earned a TripAdvisor listing, reflecting the brand's consistent quality.
