About
Founded in November 2012 by Tak Tokumine, a native of Fukuoka and the driving force behind the Japan Centre Group, Shoryu Regent Street was London's first dedicated Hakata tonkotsu ramen bar. The kitchen is led by executive chef Kanji Furukawa, who was born and raised in Hakata and developed the brand's signature 12-hour-simmered pork-bone broth to authentic Kyushu standards. Shoryu was listed in the Michelin Guide from 2014 across four consecutive editions, cementing its reputation as a standard-bearer for genuine Hakata ramen outside Japan. The Regent Street site remains the heart of the group, serving thin straight noodles, seasonal sake from Japan, and Japanese street-food sides steps from Piccadilly Circus.
