SUGOI! takes a deliberate and principled approach to Japanese food in Lisbon. Chef Rui Rosário trained at the Tokyo Sushi Academy in 2018, lived in Japan for three months, and staged at Hakkoku — a Michelin-starred restaurant in Ginza, Tokyo, known as a pillar of Edomae technique. He subsequently worked under Lucas Azevedo at Praia no Parque. The menu at SUGOI! avoids sushi deliberately, prioritising peixe cru (raw Portuguese fish treated with Japanese technique) and deeply flavoured ramen — a creative statement that technique and sourcing matter more than convention. The industrial Marvila setting adds to its off-the-beaten-track appeal.
