Chef-owner Aron Vargas learned his craft directly under Japanese itamae Takashi Yoshitake — the master whose restaurant Aya established the benchmark for authentic Japanese cuisine in Portugal. Now with two locations (near Gulbenkian and in the Mercado 31 de Janeiro), Aron Sushi serves traditional Japanese sushi and sashimi without fusion or compromise. Fish is sourced from neighbouring market vendors for freshness, and the menu is disciplined: no unnecessary innovation, just the rigorous application of technique learned from a master.
