Kimijima-san's depth of experience means every element of the meal reflects decades of refinement: the vinegar balance in the shari, the ageing and curing of seasonal fish, and the precise hand pressure of each nigiri piece. Located directly across from the historic Man Mo Temple, the restaurant's zen-influenced interior design provides a beautifully calm counterpoint to Sheung Wan's lively street life. The two-seating dinner format runs at 18:30 and 20:30, and the restaurant is known for the warm, engaging personality of its chef.
