Udatsu Sushi in Tokyo is celebrated for founding chef Hisashi Udatsu's philosophy of 'joy in eating' — meticulous Edomae craft delivered in an atmosphere of warmth and accessibility, earning the restaurant a Michelin star and a devoted global following. The Hong Kong branch, opened inside the historic stable block of FWD House 1881 in Tsim Sha Tsui, is Udatsu's first international venture. Chef Hiroki Nakamura spent more than 13 years training directly under Udatsu before being appointed to lead the Hong Kong kitchen, carrying the same commitment to wild-caught Japanese fish, hand-crafted shari, and the relaxed yet technically rigorous counter experience that defines the Tokyo original. The 12-seat counter is one of the most intimate in Kowloon, and the colonial heritage setting of 1881 Heritage adds a uniquely Hong Kong atmosphere. Udatsu himself visits regularly — in September 2025 he was confirmed to personally serve guests at the counter — maintaining a direct creative link between Tokyo and Hong Kong.
