The Hong Kong outpost maintains this philosophy at a compact Glenealy address in Central, with a semi-open kitchen counter and a small private room that seats seven to nine guests. The à la carte menu enables guests to build their own sequence of skewers, or choose from 7-, 10- and 12-skewer set courses that include salad, rice and dessert. Seasonal homemade pickles complement the skewers perfectly. With over 80 types of sake on the drinks menu, plus whisky and wine, the beverage programme matches the food's Japanese conviction.
